Buttermilk Brined Pork Chops

Tender, juicy, and packed with flavor, these buttermilk-brined pork chops are the perfect balance of savory herbs and rich buttermilk tenderness.

  • 4x 6oz bone-in, center-cut pork chops, ½ inch thick
  • 2 cups buttermilk
  • 2 tablespoons kosher salt
  • 2 tablespoons sugar
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh sage, chopped
  • 2 teaspoons ground black pepper
  • Cooking spray

Instructions

  1. Combine buttermilk, salt, sugar, lemon ring, rosemary and sage in a glass container with a sealable lid. Stir until salt and sugar dissolve. Alternate method: use a large zip-top plastic bag and shake ingredients until salt and sugar dissolve.
  2. Add pork, flip to coat all side. Seal and refrigerate overnight, turning the pork occasionally.
  3. Remove pork from marinade. Pat the pork dry with a paper towel. Sprinkle with pepper.
  4. Heat a large, non-stick pan over medium-high heat. Coat the pan with cooking spray. Add pork. Cook 3 ½ minutes on each side, or until the desired degree of doneness.
