Ingredients

  • 4x 6oz bone-in, center-cut pork chops, ½ inch thick

  • 2 cups buttermilk

  • 2 tablespoons kosher salt

  • 2 tablespoons sugar

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh sage, chopped

  • 2 teaspoons ground black pepper

  • Cooking spray

  • Combine buttermilk, salt, sugar, lemon ring, rosemary and sage in a glass container with a sealable lid. Stir until salt and sugar dissolve. Alternate method: use a large zip-top plastic bag and shake ingredients until salt and sugar dissolve.

  • Add pork, flip to coat all side. Seal and refrigerate overnight, turning the pork occasionally.

  • Remove pork from marinade. Pat the pork dry with a paper towel. Sprinkle with pepper.

  • Heat a large, non-stick pan over medium-high heat. Coat the pan with cooking spray. Add pork. Cook 3 ½ minutes on each side, or until the desired degree of doneness.
